A Simple and tasty recipe for roasted ribbed potatoes. Yummy served with sour cream and a salad.
Place potatoes in a large saucepan of cold water. Bring to the boil over high heat. Boil for 5 minutes then drain. Allow to cool slightly.
Pre-heat oven to 350F degrees f.
Brush a cast iron pan with olive oil. Mix together the butter, 1/4 tsp of sea salt and remaining olive oil in a small bowl. If you do not have a cast iron pan, then use an oven proof baking dish.
Put the potato on a chopping board, flat side down. Start from one end of the potato, cut almost all the way through, about 3 to 4 mm apart. Use a wooden spoon handle set beside each potato to help to not cut all the way through the potatoes.
Arrange the potatoes on a cast iron pan.
Brush some butter on top of each potato.
Bake the potatoes for about 30 minutes or until the potatoes turn crispy and the flesh is soft.
Sprinkle some sea salt to serve.
