This honey coffee cake recipe makes a moist delicious cake.
Preheat oven to 350 degrees F.
Grease a 9x13 inch glass baking dish.
In a pot over low heat, heat the honey, oil, coffee and vanilla.
Remove from the heat and let cool.
Using an electric mixer, in a mixing bowl, beat together the eggs, 3/4 cup sugar, Beat for 5 minutes.
Add the cooled honey mixture and mix in.
In another bowl, combine the flour, baking soda, baking powder, cinnamon and ginger together.
Add the dry ingredients to the wet in increments, using the electric mixer and beat until blended.
Transfer the batter into the prepared pan.
Bake 30-35 minutes or until center poked with toothpick comes out clean.
As soon as the cake is removed from the oven prick the surface with fork creating lots of little holes.
Spoon and spread evenly across the top the 3/4 cup honey. Sprinkle on the coconut.
Let cool and serve!
