These homemade fish and chips are as good as it gets.
Prepare the Chips
Peel the potatoes. Cut into wedge chip shapes.
Rinse in cold water and leave to sit in the water until it is time to cook them to prevent them from browning.
Prepare the Fish
In shallow dish, beat eggs and stir in lemon juice.
In a separate shallow dish, mix flour, bread crumbs and salt.
Coat fish fillets one at a time, first in egg and then in breadcrumb mixture.
Set the prepared fish onto a plate.
Cook the Chips and Fish
Heat oil in deep fryer or deep heavy bottom pan to 375°F. on a cooking thermometer.
Cook the potatoes first.
Carefully put into the hot oil and cook about 3 to 5 minutes until cooked and browned.
Use a slotted spoon to remove and place onto a plate lined with paper towels.
Cook in batches if too crowded.
Adjust oil temperature to cook the fish to a temperature of 325°F.
Gently place the fish fillets of fish one at a time into the oil and cook until crisp, about 6 to 10 minutes depending on the thickness. Cook in batches if too crowded.
Remove fish with a slotted spoon and place onto a plate lined paper towels.
Delicious served with salt, vinegar and ketchup.
