Colorful Chicken Noodle Soup Recipe

Kids of all ages will absolutely love to eat this chicken soup recipe.


1 Tablespoon margarine or butter
2 teaspoons vegetable or olive oil
1 small onion, finely chopped
1 garlic clove, minced
1 stalk celery, chopped fine
1 chicken breast, cut into small pieces
1 large carrot, thinly sliced in rounds
8 cups chicken broth
a few sprigs of fresh parsley, cut into pieces
4 oz. long noodles which are very fun to eat but you can choose a short noodle if you prefer
salt & pepper to taste

Serves 6-8


Place the margarine and oil in a large soup pot over medium heat.

Add onion and cook until tender.

Add garlic and celery and cook 2 minutes longer.

Add chicken and cook until browned.

Add the chicken broth and parsley. Turn temperature to high and bring to a boil.

Add the noodles and cook for 20-25 minutes or until noodles are soft. Stir occasionally.

Taste and season with salt and pepper to suit.

Shut off.

Serve hot.
