Blueberry Cake Recipe

A really lovely homemade blueberry cake recipe


1/4 cup unsalted butter at room temperature
1/2 cup sugar
2 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
3/4 cups milk
2 cups blueberries (coat them in a little bit of flour-just sprinke a bit on your washed blueberries and gently toss)


Mix the butter with the sugar until light and fluffy.

Add one egg and combine well.

Combine the flour, baking powder, salt and nutmeg in a bowl.

Add the dry mixture and the 3/4 cups milk, alternately to the butter-sugar mixture, beginning and ending with dry ingredients.

Fold in the blueberries.

Pour into a greased and floured 9"x13" pan and spread to the edges. (The batter is thick so you will need to use a spatula to spread)

Bake at 400(F) until done 25-30 minutes.

You can test with a toothpick. Insert into the center of the cake and if it comes out clean the cake is ready.
