2 cups liquid needs 1 Tablespoon (approx 13.8 grams) of gelatin to set.

One sheet gelatin = 1/4 Tablespoon gelatin

4. What does bloom mean?

If a recipe says to "bloom" the gelatin, this means that you are hydrating it with some liquid.

5. Can I add gelatin powder directly do a recipe?

It is best not to do this. Gelatin needs to be hydrated. This means that instead of adding it directly to a recipe, it needs to first be mixed with a bit of water to bloom and create a thicker consistency. Note, once this process begins eventually it will harden if you do not use it.

Gelatin works best when it is added to a warm mixture. Once it has bloomed, it is best to then add it to your warm mixture.

6. What kind of gelatin do you use?

Since gelatin is an animal by-product, whenever I do my own home baking I choose organic gelatin, for the same reasons that I choose organic meat.
