Yellow Layer Cake With Fluffy White Frosting Recipe

A very yummy recipe for yellow layer cake with fluffy white frosting.

Ingredients

Yellow cake
1 cup butter (room temperature)
2 cups of sugar
4 eggs (room temperature)
3 cups self-rising flour
1 cup of whole milk (room temperature)
1 teaspoon pure vanilla extract

Frosting
1 Cup agave nectar or honey
1/4 tsp. cream of tartar
2 egg whites
1 tsp vanilla
pinch of salt

Directions

Preheat oven to 350 degrees. Grease and flour (3) 8 inch cake pans.

Using a mixer, cream butter until fluffy. Add sugar and continue to cream for about 5 minutes. Add eggs one at a time. Add flour and milk and vanilla cream until just mixed.

Divide batter equally into three cake pans.

Bake for 25 – 30 minutes until done. Cool in pans for 5 – 10 minutes.

Remove and Cool completely on wire racks.

For the frosting. In a saucepan, mix together the agave nectar and cream of tartar, bring to boil, stirring constantly. reduce heat to low and let simmer. Stir occasionally.

While that’s simmering, beat the egg whites and vanilla until foamy. Add a pinch of salt and continue beating until it forms hard peaks. This takes from 3 to 5 minutes. Turn the speed to low on your mixer and pour in the agave mixture. Beat on medium high until the frosting in glossy and well combined, 2 to 3 minutes.

To Assemble place one cake layer on a serving platter and top with frosting, alternate until all layers are used and spread frostingover top and down sides.
