Vegetable Medley Recipe

This vegetable medley recipe is a simple way to prepare those root vegetables. If you are a vegetarian, this is great as the main course. If you eat everything, then this works wonderfully as a side dish with meats.

Ingredients

2 cups peeled sweet potatoes, cut into 1 inch chunks
1 1/2 cups peeled turnips, cut into 1 inch chunks
1 1/2 cups parsnips, cut into 1 inch chunks
1 1/2 cups carrots, cut into 1 inch chunks
2 onions, chopped
4 Tablespoons olive oil
3 Tablespoons brown sugar
2 garlic cloves, minced
1 teaspoon fresh parsley, finely chopped
1/4 cup sesame seeds
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

Directions

Preheat the oven to 400°F.

Grease an oven proof baking dish with olive oil.

Combine all the chopped vegetables, including the chopped onions in a large bowl and stir to mix them together.

In a measuring cup,combine the olive oil, brown sugar, minced garlic,chopped parsley,sesame seeds, salt and pepper. Mix together then pour over the vegetables in the bowl.

Use your hands to scoop and distribute the oil mixture

onto the vegetables.

Dump the vegetable mixture into the baking dish.

Bake for 35-45 minutes or until vegetables are tender and golden brown.
