Triple Cheesy Macaroni Recipe

Where all of Grandmother's favorite recipes are found, just like Grandmother makes them, with a little love.

Ingredients

2 cups elbow macaroni
1 Tablespoon salted butter
1⁄2 small onion, minced
1 garlic clove, minced
2 Tablespoons all purpose flour
2 cups milk
1 teaspoon ground mustard
3⁄4 cup shredded sharp cheddar cheese
1⁄4 cup shredded Monterey Jack cheese
1⁄4 cup shredded Gouda cheese
1/2 teaspoon paprika
salt and pepper, to taste

Directions

Preheat oven to 350F.

Grease a baking dish with butter and set aside, or you can use individual ramekins if you like.

Put a large pot of water with one teaspoon salt to boil.

When the water is boiling add the macaroni.

Cook for 8-10 minutes to cooked but not mushy.

Drain and set aside.

Meanwhile, in a saucepan, melt butter over medium heat.

Add onions and cook until transparent, a few minutes.

Add the garlic; cook another minute.

Add the flour and cook 1 minute more, stirring constantly. Gradually stir in milk and ground mustard until blended.

Bring to a boil and cook about 2 minutes, until thickened. Shut off and stir in cheeses and paprika to combine.

Remove from heat and gently stir into the cooked macaroni.

Season with salt and pepper to taste.

Pour into prepared dish(es).

Place into the preheated oven and bake for 10-15 minutes or until heated through.
