Tomato French Onion Soup Recipe

French Onion Soup with a twist! We are adding tomatoes to the recipe and it is delicious, guaranteed! This soup can be made in about 30 minutes.

Ingredients

Makes 4 servings

2 Tablespoons butter
4 medium onions, chopped
1 can (14.5) ounce of Italian flavor stewed tomatoes
2 cups water
1 can (10.5) ounce condensed beef consomme
1/4 cup dry sherry
8 thin slices French bread
1 1/2 cups shredded Swiss cheese
1/4 cup grated Parmesan cheese

Directions

In a large saucepan, melt the butter. Add the onions and cook over medium low heat for 10 minutes.

Open the can of tomatoes and drain, reserving the liquid.

Chop the tomatoes into tiny pieces.

Add the tomatoes, reserved tomato juice, water, consomme and the sherry.

Bring the soup to a boil. Skim off any foam.

Turn the heat to low and simmer for 10 minutes. Shut off.

Turn on the broiler.

Divide the soup into four broiler-proof bowls.

Top each bowl with two thin slices of French bread.

Divide the Swiss and Parmesan cheese between the bowls.

Situate the soup bowls onto a baking sheet place under the broiler. Keep an eye on the soup and broil until the cheese is melted and golden.

If you do not have broiler proof bowls, you can use ovenproof soup boils and bake for 10 minutes at 350F.
