Spicy Chicken Bites Recipe

This spicy chicken bites recipe is made with a delicious sweet and spicy sauce for dipping.

Ingredients

Sweet & Spicy Sauce
1 Tablespoon butter
3 Tablespoons honey
3 Tablespoons hot sauce

Chicken Bites
1 pound boneless, skinless chicken breasts, cut into 2-inch bite site pieces
1/2 cup baking mix
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
oil for frying

Directions

In a small saucepan set over medium meat, combine the butter, honey and hot sauce. Heat until butter is melted and sauce is bubbling. Set aside.

Preheat oven to 400ºF.

In a large plastic bag, combine the baking mix, salt and pepper. Close and shake bag to mix well.

Working in batches, if necessary, place the chicken into the plastic bag. Shake the bag to toss and evenly coat the chicken.

In a large sturdy saucepan, put about 1 inch of oil and heat the oil over medium-high heat to 325 degrees.

Again working in batches if necessary, carefully drop the chicken pieces into the hot oil. Be careful not to overcrowd the saucepan.

Cook for 3-4 minutes on each side, until golden and cooked through.

Once all the chicken is cooked, place hot chicken in a heat proof bowl lined with aluminum foil.

Pour over the sauce and gently toss until chicken is well coated. Cook in the preheated oven for 25-30 minutes or until golden and tender. Turn the chicken oven at 15 minutes of cooking time.

Use a silicone spatula to stir the chicken in the sauce to coat before removing from the baking pan to the serving dish.

Serve immediately.
