Simple Beef And Potato Stew Recipe

This simple beef and potato stew has guinness beer in the sauce. Very flavorful and easy to make.

Ingredients

2-3 pound lean stew meat
1/2 cup all purpose flour
2 Tablespoons oil
2 onions, chopped
1 celery piece, chopped
4 garlic cloves, whole
3 carrots, chopped into cubes
8 baby potatoes
1/4 cup fresh herb (your choice)
salt and pepper to taste
2 1/2 cups beef stock
2 (12 ounce) bottles of guinness beer

Directions

Dip stewing beef pieces in the flour to coat lightly.

Use a large skillet.

Put in 2 tablespoons of olive oil.

Heat the oil, then add the flour coated beef pieces and brown them.

Add the onions and garlic and brown.

Transfer the beef, onions, garlic, carrots and potatoes in a stock pot.

Add herbs and salt and pepper to taste.

Cover beef with stock.

Bring to a boil, then turn down to simmer, cover and cook over a low heat for 30 minutes.

Next add Guinness, bring to a boil and simmer for another 30 minutes.

Turn off and with a slotted spoon remove meat, potatoes and carrots from the sauce and place them in a large casserole or serving dish. Tent with aluminum foil.

Reduce the sauce to half the quantity over high heat. Once sauce is reduced pour over beef and serve.
