Simple Apple Cake Recipe

This simple apple cake recipe is just a one layer cake make in a 10-inch pan, frosted with confectioners' sugar. Easy to make and smells wonderful when baking.

Ingredients

3 medium apples, peeled
lemon juice
2 cups all purpose flour
1 Tablespoon baking powder
2 teaspoons cinnamon
1 cup butter, at room temperature
1 1/2 cups granulated sugar
3 eggs
2 teaspoons vanilla

confectioner's sugar
Serves 6 - 8

Directions

Preheat oven to 350 degrees F.

Grease a 10 inch spring form with oil.

Core and slice the apples thinly. Put sliced apples in a bowl full of water and 1 teaspoon lemon juice. Set aside.

Whisk together flour, baking powder and cinnamon. Set aside.

Beat together butter, sugar, eggs and vanilla until well incorporated. Add dry ingredients and mix until well combined. Fold in apples.

Pour batter into prepared spring form pan and bake for 50 to 60 minutes, or until top is golden brown and an inserted toothpick comes out clean. Set to cool, once cool enough to touch release cake from spring and let cool completely on a wire rack.

Dust cooled cake with confectioners sugar. Garnish with some fresh mint.
