Root Vegetable Gratin Recipe

This super healthy root vegetable gratin will fast become a favorite. It has color, texture and is great on it's own with a salad or you can serve with fish, meat or poultry.

Ingredients

2 Tablespoons butter
6 small potatoes, peeled and sliced into rounds
1 carrot, sliced into rounds
1 small sweet potato, peeled and chopped
1 parsnip, peeled and sliced
1 cup broth ( vegetable)
1/2 cup cream
1 onion, chopped into fine pieces
1 garlic clove, minced
1 small sweet potato, peeled and chopped
2 Tablespoons Italian seasoning
1/3 cup parmesan cheese, freshly grated
(Serves 4)

Directions

Preheat oven to 375 degrees F.

Butter an 8x8 baking dish.

If you are feeding a larger crowd, use a 9x13 pan and just increase the amount of vegetables.

Layer the sliced vegetables decoratively in the baking dish and set aside.

Warm the cream and broth in pot, add the chopped onion, garlic and Italian seasoning, stirring to combine and season to taste.

Pour the sauce over vegetables.

Bake covered for 35 minutes.

Sprinkle with parmesan cheese when warm from the oven.
