Roast Chicken Breast Recipe

Ingredients

Serves 2

2 chicken breast halves, bone-in, with skin
1 1/2 teaspoons poultry seasoning
1/2 teaspoon paprika
Salt and fresh ground pepper
1 -2 Tablespoon butter, melted
1/4 cup white wine
1/4 cups chicken broth
2-3 sprigs of oregano

Directions

Preheat oven to 400°F.

Line a 9x13-inch baking dish with aluminium foil and grease with olive oil. Set aside.

With clean hands, loosen skin on chicken breast by gently sliding your fingers between the meat and the skin.

Rub half of poultry seasoning under the skin of each chicken breast.

Sprinkle chicken with paprika, salt and fresh ground pepper.

Place chicken breasts, skin side up, in the prepared baking dish.

Using a basting brush, brush chicken with melted butter.

Pour 1/4 cup chicken broth and 1/4 cup white wine into the bottom of the dish.

Add sprigs of thyme.

Cover dish with aluminum foil and transfer to the preheated oven.

Roast for about 40 minutes, until cooked through.

Allow chicken to sit for 5 minutes before serving. Remove the thyme sprigs and spoon any juice that is in the bottom of the pan over the breasts.
