This quinoa salad with feta cheese and broccoli sprouts and florets is very nutrional and a healthy food choice. Plus it tastes really good!
Quinoa
To cook the quinoa, first rinse well and drain.
Put 2 cups water and 1 cup quinoa into a saucepan.
Bring to a boil and cover the pot with a lid.
Turn down to medium low and cook for 10 to 15 minutes or until all the liquid has absorbed into the quinoa.
The texture will be slightly crunchy and the quinoa will be translucent.
Transfer the quinoa to a large bowl and let cool to warm.
In a small bowl, stir together the oil, vinegar, garlic, salt and pepper. Stir into the warm quinoa.
Once the quinoa is room temperature, you can toss in the salad ingredients.
This salad should be served at room temperature.
