Perfect Roasted Potato Rounds Recipe

If you are looking for the perfect potato to prepare this weekend, these roasted potatoes with their crispy brown skins are easy to make and will go with any dish.

Ingredients

4 russet potatoes, washed and sliced into 1/2 inch rounds
2 Tablespoons olive oil to lightly grease baking sheet
2-4 garlic cloves, minced (depends how much garlic you prefer)
2 Tablespoons olive oil to coat potatoes
1 teaspoon salt
1 teaspoon pepper

Directions

Preheat the oven to 375F.

Line a baking sheet with parchment paper and grease the paper with the olive oil.

Place the sliced potatoes into a large pot and cover with water. Add 1/2 teaspoon salt. Bring to a boil and cook for 5 minutes only to parboil. DO NOT OVERCOOK!!! The potatoes need to be firm.

Drain the water from the potatoes and transfer them to a wide large bowl. Let the steam go out of the potatoes.

Meanwhile stir the oil, minced garlic, salt and pepper together. Drizzle over the cooled potatoes and toss gently and lightly to coat.

Arrange the potatoes onto the baking sheet and leave space between them so the will brown nicely. Do not stack or they will not be crispy.

Drizzle any oil remaining in the bowl onto the potatoes.

Place the baking sheet into the oven and roast for 30-40 minutes until the potatoes are golden brown.Remove and serve.
