Pecan Squares Recipe

This pecan squares recipe is an easy to make dessert.

Ingredients

Bottom Layer
1 cup all purpose flour
1/4 cup granulated sugar
1/8 teaspoon salt
1/4 cup butter

Pecan Topping
3/4 cup packed brown sugar
1 cup light corn syrup
1 large egg
4 large egg whites
1 1/4 cups finely chopped pecans
1 teaspoon pure vanilla extract

Directions

Bottom Layer

Preheat oven to 350 degrees F.

Grease a 9-inch square cake pan with butter.

In a bowl, stir together the flour, sugar and salt.

Use a pastry cutter or two knives and cut the butter into the flour mixture, until it forms a crumbly texture.

Pat the flour mixture evenly into bottom of the prepared pan.

Place into the preheated oven and bake for 20 to 25 minutes or until lightly browned.

Pecan Topping

Using a medium sized sauce pan, and medium heat, stir together the brown sugar and corn syrup.

Bring to a boil. Remove from heat and let cool down to warm.

In a medium size bowl, combine the egg and egg whites.

Stir one-fourth warm syrup mixture into eggs, a little bit at a time so you don't cook the eggs.

Stir the egg mixture back into the warm syrup mixture.

Stir in the vanilla.

Stir in half of the chopped pecans.

Pour the mixture over crust. Sprinkle on the remaining pecans.

Bake in the preheated oven for 30 minutes or until set.

Remove from oven and let cool completely then cut into squares.
