Orange Layered Cake Recipe

This orange layered cake recipe is a three layer cake filled with sweet frosting and topped with tangy orange jelly.

Ingredients

Cake
1 cup butter, at room temperature
2 cups all purpose flour
2 cup granulated sugar
zest of 1 orange
4 eggs
1 teaspoon baking powder
1/4 cup orange juice
orange food coloring (optional)
Frosting
1/2 cup butter, at room temperature
3 cups confectioners sugar
2-3 Tablespoons lemon juice
Topping
1 cup smooth marmalade (no orange shreds)
12 Black berries

Directions

Preheat the oven to 350 degrees F.

Grease and line with parchment paper, three 8-inch cake pans.Set aside.

Cake

Cream the butter in a large bowl using an electric mixer.

Gradually add the sugar, and orange zest, and continue to beat until the mixture is light and fluffy.

Add the eggs, 1 at a time, beating well between each addition.

Sift the flour and baking powder into the mixture, and stir.

Gently, stir in the orange juice.

Divide the mixture evenly between the 3 prepared pans.

Bake 25 minutes or until a skewer comes out clean when inserted into the center of the cakes.

Let the cakes sit for 5 minutes, and then turn out onto a wire rack, and cool completely.

Orange Filling

Cream the butter until very soft, and then add the sugar.

Gradually beat in 1 tablespoon of the lemon juice at a time until desired consistency is reached.

Assembly

When the cakes are cool, spread the frosting between the cake layers.

Spread the frosting over the top and sides, then top with marmalade and black berries.
