Oh So Yummy Cinnamon Buns Recipe

Ingredients

Makes 12 buns
Buns:
4 cups all purpose flour
1 teaspoon salt
1/4 cup light brown sugar
1 1/2 teaspoons active dry yeast
1/2 cup butter at room temperature
3/4 cup milk
2 free-range eggs, plus one egg yolk, for glazing
*butter to grease the mixing bowl

Filling:
1/3 cup brown sugar
1/4 cup granulated white sugar
1 teaspoon ground cinnamon
1/4 cup butter, melted

Directions

In a large mixing bowl, stir together the flour, salt and sugar. Stir in the dry yeast. Add the room temperature butter and mix in with beaters on low speed or you can use your fingers to combine until it is a crumbly texture. Make a well in the center and pour in the milk and ONE egg.

Mix using a spatula or you can continue to use your fingers if you like that method. This will make for a stick dough, but keep on mixing until the flour absorbs all the excess liquid.

Lightly flour a clean flat surface and turn the dough out onto it. Knead the dough by hand for 10 minutes.

When the dough is ready, the texture should be such that you should be able to cut off a small piece and stretch it thin enough to see light through it.

Be sure your mixing bowl is clean, then lightly grease the bottom and sides with butter.

Place the dough into the boil, cover with a damp cloth and put someplace warm to rise for 80-90 minutes or until it has roughly doubled in size.

Filling:

When you can see the dough has risen, make the filling by mixing together the sugars with the cinnamon in a small bowl. Melt the butter in a small saucepan and set aside.

Take your bowl with dough and punch it down, then transfer to your lightly floured working surface and use a rolling pin to roll it out into a triangle about 1/4 inch thick.

Use a pastry brush to coat the dough with the melted butter then sprinkle the sugar/cinnamon mixture on to.

Roll your dough into a log and cut into 12-16 pieces. Place each of these cinnamon bun pieces onto a cupcake liner and place them onto a baking sheet. Cover with a clean dam cloth and allow to proof for about 45 minutes. While they are rising heat the oven to 400F.

Before placing into the oven, beat the remaining egg with the egg yolk together in a small bowl. Use a silicone brush to gently paint on the beaten egg.

Place the baking sheet in the center of the oven and bake for 10 minutes then drop the oven heat to 350F. and bake for another 20 minutes.

Remove from the oven and let cool for 5 minutes, then transfer the cinnamon buns directly to a cooling rack.
