No Bake Strawberry Cheesecakes Recipe

Delightful individual strawberry cheesecake desserts. Make ahead and impress your family and friends with this light and delicious dessert treat.

Ingredients

Biscuit Layer
150 g crushed vanilla biscuits or graham crumbs
2 Tablespoons butter, melted
2 Tablespoons granulated sugar
1/2 Tablespoon fresh fine-chopped grated lemon zest
6 Tablespoons orange juice

Cheesecake Layer
2 sheets gelatin
1-2 Tablespoon lemon juice
12 ounces cream cheese, at room temperature
8 ounces granulated sugar
300 g thick Greek style yogurt
1 teaspoon vanilla extract

Strawberry Layer
1 Tablespoon lemon juice
1 Tablespoon water
2 Tablespoons cornstarch, dissolved in a little orange juice
4 ounces granulated sugar
1 kg fresh strawberries, cleaned and sliced

Directions

Biscuit Layer

Mix all the biscuit layer ingredients together in a bowl and set aside.

Cheesecake Layer

Soften the gelatin in the lemon juice and a spoonful of water (if needed), for about 3-5 minutes.

Heat the mixture gently over low heat in a small saucepan until the gelatine is completely dissolved.

Meanwhile, whisk the cream cheese and sugar in a mixer OR blender on medium speed.

When the sugar has dissolved, add the yogurt and the gelatine mixture and beat in.

When the mixture is blended together, add the vanilla extract.

Strawberry Layer

Place the lemon juice and water into a small saucepan and mix in the cornstarch very well using a whisk.

Bring to a boil, and when the cornstarch has dissolved, mix in the sugar and the strawberries.

Heat gently to dissolve sugar, then remove from heat and allow to thicken.

Assembly

Place a biscuit layer in the base of six glasses.

Add a good dollop of the cheesecake mixture, then a layer of strawberry mixture.

Cover each glass and chill for a few hours.
