Mexican Lasagna Recipe

This mexican lasagna is made with lean ground turkey and corn tortillas. Easy to make and very tasty!

Ingredients

1 lb lean ground turkey
1 Tablespoon olive oil
1/2 cup chopped white onion
1 (1 1/4 ounce) packages taco seasoning
1 1/2 cups tomato sauce
16 ounces salsa or 16 ounces picante sauce
1 cup cottage cheese
1 egg
8 corn tortillas
4 ounces light monterey jack cheese, shredded
4 ounces light cheddar cheese, shredded
fresh chopped cilantro to garnish

Directions

Preheat oven to 350°F.

Grease a 9 x 13 pan with butter.

In a skillet on the stovetop heat the olive oil. Add the onion and cook until it soft. Add the groundturkey and cook until browned and cooked through.

Stir in the taco seasoning, tomato sauce and salsa and let it simmer for about 5 minutes over low heat.

In a small bowl, stir together the cottage cheese and the egg.

In the prepared pan make your lasagna layers:

start with a meat layer,

next 4 of the tortillas,

next half of the cottage cheese mixture

next half of the shredded cheese

Repeat the process, ending with the cheese on the top.

Bakein the preheated oven for 25 minutes.

Remove to a cooling pad and let sit for 10 minutes to set before serving.

Garnish with freshly chopped cilantro.
