Ingredients

Serves 6

8 russet potatoes
1/2 cup olive oil
salt and pepper
optional: paprika

Directions

Preheat oven to 375F.

Wash and peel potatoes.

* You can also leave the skins on if you wash well.

Begin by cutting each potato in half lengthwise to keep your potatoes as long as possible.

Slice potatoes again in lenghtwise direction to make skinnier pieces.

Chop each section into skinny rectangles (or wedges will work too).

Line a baking tray with parchment paper and drizzle with half your oil.

Line potatoes on top of oil, and drizzle with remaining oil, salt, pepper and paprika.

Bake for 20 minutes, and then check and flip your potato fries to cook each side evently.

Bake for another 20 minutes, and then 5 minutes before it is time to serve, increase oven heat to broil (about 500F), so make potato fries nice and crunchy.
