A very yummy recipe for Grandmothers favorite chocolate layer cake with a creamy chocolate frosting.
Preheat the oven to 350F, and grease and flour two 9-inch round cake pans.
Sift together the flour, baking soda, baking powder and salt. set aside
In a medium bowl, Mix the boiling water and cocoa powder until its smooth. Set it aside and allow it to cool to room temperature.
In a large bowl, cream the butter until soft. Gradually add the sugar, beating until its light and fluffy.
Add the eggs and vanilla, beating the mixture thoroughly
Add the flour mixture to the butter mixture in three steps, alternating with the cocoa mixture. Mix until the batter is just smooth.
Spread the batter evenly between the two greased pans.
Bake for 25-30 mins, or until a toothpick inserted in the center comes out clean.
Let the cakes cool 5 minutes in their pans, then transfer them to a wire rack.
For the frosting. In a large bowl, cream butter, sugar and cocoa with cream. Blend in vanilla. Beat until light and fluffy.
To serve. Place one later of cake on a serving tray, top with frosting then the top layer of cake. spread frosting over top and sides of cake.
