Easy Pavlova Recipe

An easy pavlova recipe that is so light and delicious. Topped with fresh juicy berries, this dessert will have the whole table wishing you made double.

Ingredients

Meringue

4 egg whites
1 1/4 cups caster sugar
1 teaspoon white wine vinegar
1 teaspoon cornflour
1 teaspoon vanilla extract

Topping
2-3 cups fresh chopped or whole berries
3 Tablespoons confectioners' sugar
1.5 cups heavy cream

Directions

Meringue

Preheat oven to 300 degrees F.

Cut out a pieces of round parchment paper the size of a dinner plate and place onto a baking sheet.

In a glass bowl, beat egg whites until they form stiff peaks.

Add sugar one Tablespoon at at time until glossy.

Whisk in vinegar and cornstarch.

Spread the meringue on the parchment paper circle.

Make the sides a little bit higher than the center, like a well.

Bake for 1 hour or until a toothpick comes out clean from center.

Leave in oven and turn off heat and let it cool entirely inside the oven.

Once cool, remove and place on your serving tray.

Topping

Whip the cream until soft peaks form.

Spread whipping cream over meringue.

Arrange berries creatively on the top.

Dust with confectioners' sugar.
