Creamy Cauliflower Recipe

Make this creamy cauliflower recipe to go along with your entree.

Ingredients

1 head cauliflower (large)
2 Tablespoons margarine or butter
6 Tablespoons all purpose flour
2 cups milk
2 cups shredded white cheddar cheese, divided
1/2 teaspoon garlic powder (optional)
salt and pepper, to taste

Serves 4-6

Directions

Preheat oven to 350°F

Grease an oven proof baking dish. Set aside.

Wash the cauliflower, cut out the core and cut into bite size pieces.

Place into a sauce pan and just cover with water.

Place onto the stove top over medium high heat and bring to a boil. Cover with a lid and steam for about 5 minutes, just until tender. Strain in a colander and set aside.

While the cauliflower is cooking, melt the margarine and garlic powder in a medium size saucepan.

Whisk in flour until smooth and mixture has thickened. Stir in the milk, a little bit at a time, until smooth.

Cook, stirring constantly, over a medium heat until thick and creamy.

Add 1 cup of shredded cheese and stir until melted.

Remove from heat and salt and pepper to the sauce to taste.

Spread the cauliflower pieces into the baking dish.

Pour the cheese sauce evenly over the top and then sprinkle with an additional cup of cheese.

Place into the preheated oven and bake until the cheese is melted and lightly browned.

Serve hot.
