Cornmeal Loaf Recipe

This recipe for cornmeal loaf is easy to make and is a delicious side to many meals.

Ingredients

1 1/2 cups all purpose flour
1/3 cup yellow cornmeal
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup granulated sugar
3 Tablespoons vegetable oil
1 Tablespoon lemon juice
1 teaspoon lemon zest
1 large egg
1 large egg white
1/2 cup plain yogurt

Directions

Preheat oven to 350°F

Lightly coat a loaf pan with oil.

In a medium bowl, stir together the flour, cornmeal, baking powder, and salt, set aside.

In a large mixing bowl, using and electric mixer on low speed, mix together sugar, oil, lemon juice, lemon zest, and eggs. Make sure this is mixed well together.

Alternating between flour mixture and yogurt, mix these ingredients into sugar mixture, until well combined.

Make sure not to over mix.

Pour batter into prepared loaf pan. Dust the outside of the loaf with flour.

Place into the preheated oven and bake for 25 minutes.

Cover the loaf loosely with aluminum foil, and bake for an additional 25 -35 minutes, or until a toothpick inserted in the center comes out clean

Remove from the oven and place onto a cooling rack.

Let loaf stand for about 10 minutes, then remove from pan onto a cooling rack and let cool completely.

This loaf is extra delicious warm from the oven.
