Chocolate Whoopie Pie With Cream Filling Recipe

Delicious chocolate whoopie pies filled with a light and creamy cream cheese center.

Ingredients

1 3/4 cups of all-purpose flour
2 tablespoons of unsweetened cocoa powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
1/4 cups of semi-sweet chocolate chips
1 stick of unsalted butter, room temperature
1 cup of sugar
1 large egg
1 teaspoon of pure vanilla extract
3/4 cup of buttermilk

Cream Cheese Filling

1/2 stick of unsalted butter, room temperature
8 ounces of cream cheese
2 cups of powdered sugar
2 tablespoons of milk
1 teaspoon of pure vanilla extract

Directions

Preheat oven to 375 degrees F.

In a medium mixing bowl, combine flour, cocoa powder, baking soda, and salt.

In the top of a double boiler, melt the chocolate. Once melted, turn off the heat but leave it on the stove so it stays soft.

In a large bowl, with an electric mixer beat the butter and sugar on medium to high speed until light and fluffy. Beat in the egg and vanilla.

Beat in the melted chocolate until smooth. Then on low speed mix in half of the dry ingredient mixture and beat until smooth.

On low speed, beat in the buttermilk followed by the other half of the dry ingredients. Beat on medium to high speed until smooth.

Spoon dough (about 1 tablespoon for each cookie) onto a parchment-paper lined cookie sheet keeping them about 2 inches apart.

Bake for 15-20 minutes, making sure to cool completely when finished baking.

Frosting

In a medium mixing bowl, combine all ingredients and beat with an electric mixer until light and fluffy.

Let cookies cool entirely before making sandwiches.
