Directions

Dark Chocolate Pudding

Use a heavy bottomed medium size saucepan.

Whisk together the sugar, cocoa, cornstarch and salt.

Whisk in the whipping cream and milk and using medium heat, cook the pudding, and stir constantly until the mixture thickens and comes to a boil. (this should take about 5 minutes).

Remove from heat, and gently stir in the chocolate chips and vanilla. Don't overmix.

White Chocolate Pudding

Use a heavy bottomed medium size saucepan.

Whisk together the sugar, cornstarch and salt.

Whisk in the whipping cream and milk and using medium heat, cook the pudding, and stir constantly until the mixture thickens and comes to a boil. (this should take about 5 minutes).

Remove from heat, and gently stir in the chocolate chips and vanilla. Don't overmix.

Let the pudding cool then divide the mixture into 4 small dessert dishes doing a layer of dark chocolate pudding, then a layer of white chocolate pudding, topped with a second layer of dark chocolate pudding.

Cover each dish with plastic wrap and refrigerate for at least 2 hours before serving.

Dark and White Chocolate Wafer

Line a cookie sheet with parchment paper.

You will need to do each chocolate color individually.

Both the dark chocolate and the white chocolate need to be warm when they are poured into the cooking pan.

Melt the chocolate over double boiler, or in a bowl that can fit over a pot (filled with water).

Use low heat and stir constantly, until all the chocolate is melted.

When both chocolates are melteld, pour the dark chocolate over parchment.

Drizzle the white chocolate on next and use a spatula to make a swirl pattern while the chocolates are both still warm.

Let the chocolate cool and set, then using a very sharp knife cut the garnish squares.

When you serve the pudding, put a marbled chocolate square in each and you can put the extra chocolate swirl onto a plate that can be served as 'extras'.
