Cheesy Chicken Breasts Recipe

This cheesy chicken breasts recipe is super easy to make and the chicken comes out moist and tasty with delightful melted cheese in each bite. This is a great recipe that turns a plain chicken breat into a tastier more appealing dish.

Ingredients

1 Tablespoon olive oil
1 large onion, sliced
4 boneless skinless chicken breasts, cut in halves
2 Tablespoons mayonnaise
2 Tablespoons of dijon mustard
2 medium sized tomatoes, sliced thin
2 cups grated mozzarella cheese

(Serves 4-6)

Directions

Preheat the oven to 400 degrees F.

Line a baking sheet with aluminum foil.

Heat the oil in a skillet and saute the sliced onions until translucent. Turn off and transfer the onions to the baking sheet, making 8 piles of onions with some spacing between.

Cut each breast into two pieces so you have smaller sections.

Mix the mayonnaise and mustard together in a shallow dish.

Dip each piece of chicken into the mayonnaise mixture, coating both sides and place the prepared breast onto a pile of onions. Continue until you have all 8 pieces done. Place into the preheated oven and bake for 30-15 minutes until the chicken is golden brown and cooked through.

Remove from the oven and place 2-3 thin slices of tomato on each piece of chicken.

Divide the grated cheese evenly on all 8 pieces and place back into the oven.

Cook another 8-10 minutes until the cheese is melted and golden brown.

If you are making this for kids and they don't like the onion flavor, just do some of the pieces without the onion underneath.
