Berry Pie Recipe

This Berry pie recipe is a sweet treat that is delicious enjoyed with a scoop of ice cream.

Ingredients

Crust
2 cups all purpose flour
1/2 teaspoon salt
2/3 cup butter, chilled
6 Tablespoons cold water

Filling
2 1/2 cups strawberries, cut to 1/2 inch pieces
2 1/2 cups raspberries
1/2 cup granulated sugar
3 Tablespoons cornstarch

Directions

To make the crusts, In a large mixing bowl, combine the flour and salt.

Using a pastry blender, cut in butter until the pieces are the size of small peas.

Sprinkle 3 tablespoon of the water over of the mixture, then gently mix with a fork.

Add more water 1 tablespoon at a time, until all is moistened.

Divide the dough in half. Form each half into a ball and flatten slightly.

Wrap in plastic and refridgerate for 30 minutes.

Preheat oven to 375 degrees F.

Transfer one piece of dough to a lightly floured surface. Roll the dough from the center to the edges to form a 12-inch circle.

Carefully transfer crust to pie plate, trim the crust edge to the rim of the pie plate.

To make the filling, In a large mixing bowl, stir together the sugar and cornstarch.

Add the berries, gently toss until berries are coated.

Pour the berry filling into the pastry.

Roll out the remaining pastry for the top crust.

Place the top crust over the pie and trim the edges, Pinch the edges of the crust to seal and cut vents in the top.

Bake for 45-50 minutes, or until the filling is bubbling and the crust is golden.

Cool on a wire rack.
