Berry Oat And Nut Bars Recipe

Making a batch of these delicious berry oat and nut bars will be perfect for lunch boxes, and coffee breaks!

Ingredients

Makes one 9x13 pan ( 12-15 servings)

1 cup butter, at room temperature
1 cup brown sugar
1 3/4 cup all purpose flour
1 teaspoon salt
1 1/2 cups oatmeal
1/2 cup chopped nuts (walnuts, pecans, almonds,peanuts whatever nut you like)
1 cup jam of your choice, like strawberry, raspberry or you can do a combination.
1 cup frozen strawberries, defrosted and if the berries are large cut into smaller pieces

Directions

Preheat the oven to 375F.

Lightly grease a 9x13-inch baking dish with butter.

Place the butter into a large mixing bowl and using an electric mixer, beat until creamy.

Add the brown sugar and mix in.

Add the flour and salt and mix in.

Add the oatmeal and nuts and mix in with a wooden spoon.

Transfer half of this mixture into the prepared pan.

Stir the berries and the jam together.

Spread the berry/jam mixture onto the layer.

Spread the other half of the mixture on top like a crumble topping.

Place into the preheated oven and bake for about 25 minutes or until it is golden brown.

Remove to a cooling rack. Let the bars sit and cool for 10 minutes before cutting.

Leftovers can be refrigerated, just put a plastic wrap over the pan.
