Battered Fish Recipe

This battered fish recipe uses ginger beer. Give it a try!

Ingredients

1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
pepper and salt
4 -8 ounces halibut fillets
1 -296 millilitre bottle ginger beer
1/2 cup cornstarch, approximately (for dredging)

Directions

Heat deep fryer to 365 F.

Together whisk flour, baking powder, cornstarch and peppar and salt.

Add ginger beer to dry mixture and stir enough until combined. If batter is over mixed, it will be tough.

In the cornstarch dredge halibut then dip in the batter.

Allow any excess batter to drain away, then slowly, and carefully, dip the fish into the hot oil.

Fish can be fried until golden and crispy and is cooked through, approximately 8 to 10 minutes. Note, the oil temperature will drop a little, the ideal is 365 degrees.
