Baked Potato With Butter & Cheese Recipe

This simple potato is fun to make for a special dinner. Be creative and serve with toppings you like.

Ingredients

Makes 4 servings

4 baking potatoes
2 Tablespoons butter, melted
1 Tablespoon olive oil
salt and pepper to taste

Toppings
freshly grated parmesan cheese
freshly chopped parsley

Directions

Preheat the oven to 425F.

Melt the butter in a small pan over low heat. Shut off and set aside.

Scrub the potatoes and pat dry.

Using a sharp knife, make slices across the potato the short way about 1/8 to 1/4 inch apart, making sure to cut down to the lip of the spoon, not all the way through the potato.

The slices should stay connected at the bottom.

Rub each potato with olive oil.

Place the potatoes,cut side up in a shallow baking dish.

Drizzle with half of the butter, then season with salt and pepper.

Place into the preheated oven and bake for 35 to 40 minutes.

Remove from the oven, and drizzle with the remaining butter and season with a little more salt and pepper.

Return to the oven, and bake for an additional 20 minutes, or until nicely browned.

Serve with freshly grated parmesan cheese and chopped fresh parsley.
