Bacon Wrapped Potatoes Appetizer Recipe

Looking for a mouth watering bacon wrapped potatoes appetizer. This recipe also comes with a delicious honey mustard sauce.

Ingredients

2 large potatoes, peeled and washed, and cut into quarters
4 slices bacon

Glaze
1/4 cup softened butter
1/4 cup honey
1/2 cup mozzarella cheese, shredded
2 Tablespoons mustard
1/2 teaspoon fresh ground black pepper
2 Tablespoons scallions, chopped
1 teaspoon fresh parsley, chopped

A jar of pickled red peppers

toothpicks to hold the toppings in place

(Makes 8 pieces)

Directions

Preheat the oven to 375 degrees F.

Line a baking pan with aluminum foil.Choose a size that will hold the potatoes, so they sit close together.

Put potatoes in a medium saucepan and fill until just covered with water. Add 1/2 teaspoon of salt.

Cut the potatoes into quarters.

Parboil potatoes until just tender when poked with a fork. About 10 minutes. Once cooked, drain and set aside.

While the potatoes are cooking, use a skillet on the stove top to cook the bacon. Don't over cook as you want to be able to wrap the bacon pieces onto the potatoes. Once cooked, remove to a plate lined with paper towels to absorb the fat.

Glaze

In a medium mixing bowl, combine butter, honey, shredded cheese, mustard, black pepper, scallions and parsley. Mix well and set aside.

Working one at a time, wrap each potato chunk with 2 pieces of bacon and 2 pieces of pickled red peppers. Secure with a toothpick on each end.

Set into the prepared cooking dish and drizzle the glaze on.

Place into the preheated oven and cook for 15-20 minutes, until heated through.

Serve nice and hot and drizzle on any glaze that sits in the pan.
