20 Minute Caramel Tarts Recipe

An easy dessert that will be loved by all.

Ingredients

Pastry
1 egg yolk
2 Tablespoons very cold water
1 teaspoon vanilla extract
1 1/4 cups all purpose flour
1/3 cup granulated sugar
1/4 teaspoon salt
1/2 cup cold unsalted butter, cut into small cubes

Filling
1 cup brown sugar
2 Eggs
1 cup milk
1 Tablespoon Butter, melted
1 Tablespoon all purpose flour
1 teaspoon vanilla extract
1 Tablespoon confectioners sugar

Directions

Preheat oven to 375 degrees F.

To make the pastry. In a small bowl, stir together the egg yolk, water and vanilla; set aside.

To make the dough by hand,

In a large bowl, stir together the flour, sugar and salt.

Using a pastry cutter, cut the butter into the flour mixture until the texture resembles coarse meal.

Add the egg mixture and mix with a fork just until the dough pulls together.

On a lightly floured board, roll out until the dough is about 1/8 inch thick.

Use a small, knife to cut out a 6 rounds 2 inches greater in diameter than your tart pans.

Place pastry in tart tins.

To make the filling. Place sugar and flour in a saucepan. On a low heat, mix to a paste with a 2 Tablespoons milk.

Continue stirring and add butter, egg yolks and remaining milk.

Stir over a low heat until the caramel thickens.

Stir vanilla into mixture.

Spoon mixture into pastry case and pinch the pastry tops to close except for a small hole.

Place in oven for 15 minutes, or until the tops have browned.
